Supper last night. A deliciously ripe avocado, followed by Spelt Tortellini from Biona (great brand, awful website), sprinkled with vegan parmesan from Galaxy Nutritional Foods - brought back from NYC, not sure they have it in the UK.
Summer is here! I celebrated with a Super Beach Fit Salad from Pure (thankfully, I also picked up a bit of bread and carrot sticks otherwise I probably would be eating my desk right now).
I’m sure somewhere in his heart, Obama is a bit vegan.

The other day I was invited for a Persian-themed dinner and asked to make nibbles. So I got my favourite recipe books out and made a triumph with these two delicious dips…
The first and vibrantly pinkish one is the Beetroot and Walnut Hummus from Hugh Fearnley- Whittingstall’s River Cottage Everyday (here’s the recipe on the Channel 4 website).
The second is the Burnt Aubergine and Tahini from Ottolenghi’s Plenty (recipe here in Unhip Squirrel blog).
Last Sunday, Oksana had me and Karen over for lunch and cooked an Indian vegan feast for us. She made steamed kale, a green lentil dahl and a bean and pepper curry, with brown red rice. Amazing!
